Ingredients Needed for Mutton Korma:
Mutton, onions, green chilies, tomatoes, ginger garlic paste, red chili powder, turmeric, salt, coriander powder, cumin powder, cinnamon sticks, cloves, cardamom, bay leaves, poppy seeds, grated coconut, yogurt, warm milk, saffron, almonds, coriander leaves, curry leaves, and oil.
Preparation Method:
Marinate the Mutton: Clean the boneless mutton and place it in a bowl. Add yogurt, red chili powder, turmeric, salt, ginger garlic paste, green chilies, cumin powder, and coriander powder. Mix well and refrigerate for an hour.
Prepare the Poppy Seed Paste: Soak poppy seeds in water and then blend them with grated coconut into a fine paste.
Cook the Spices and Onions: Heat oil in a pan and add cinnamon sticks, cloves, cardamom, and bay leaves. Sauté for a minute and add chopped onions and green chilies. Fry until the onions turn golden brown.
Add Tomatoes and Marinated Mutton: Add chopped tomatoes to the pan and cook until soft. Then, add the marinated mutton and mix well. Cover and cook for 10 minutes.
Add Poppy Seed Paste: Stir in the poppy seed paste and cook for another 2 minutes. Then add some salt and curry leaves, cook for 5 more minutes, and then add water. Cover and cook for 15 minutes.
Add Saffron Milk and Almond Paste: Mix saffron in warm milk and add it to the mutton. Blend soaked almonds into a paste and add it as well. Let it boil.
Final Touch: Add garam masala and chopped coriander leaves. Cook for 5 more minutes, then turn off the stove. Delicious mutton korma is ready!
